Remember that time I told you about the best banana cake I’ve ever had?
It was the moistest cake I’ve ever eaten. Sweet, but not overpowering. Mega banana flavor, certainly more banana flavor than any banana bread I’ve ever eaten. The banana cake was dense, but not heavy
How to make it? These are the ingredients you’ll need
2 large eggs
75 gr All purpose flour
75 gr Sugar
75 gr Margarine
1/2 tsp Emulsifier
100 gr Ripe Bananas
1/4 tsp vanilla
Method
-In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Set aside.
-Place butter or margarine in the pan and melt gently on low heat. Set aside and let cool.
-Break the eggs and add emulsifier into the bowl; mix until light and frothy (or about 8-10 minutes)
-Add flour and vanilla, mix thoroughly.
-Add melted margarin, mix thoroughly.
-Add Mashed Banana, mix thoroughly.
-Pour the batter into your prepared loaf pan (Diameter 22x10 cm). The pan should be lined with parchment paper and greased with butter or margarine or nonstick cooking spray.
-Bake for 25 to 30 minutes at 160-175 degrees Celcius, or until a tootpick or wooden skewer inserted into the center comes out clean.
-Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving.
-Slice and serve.
